The complete name of this dish appears to be "Disney's Ralph Brennan's Jazz Kitchen Cajun Blackened Chicken Mac and Cheese." This is a very popular dish. There are lots of raves about the dish in reviews of the restaurant and lots of people are looking for the recipe or a good copycat. However, neither Disney nor Ralph Brennan have released the recipe for it, and the only possible copycat recipe for it that I could find is an iffy video recipe here:
Cajun Chicken Mac & Cheese
There are a lot of recipes on the web for "Cajun Chicken Mac & Cheese" and "Cajun Blackened Chicken Mac & Cheese," but I could not find even one with a reliable connection to Disney or to Ralph Brennan or to "Jazz Kitchen." Not a recipe or a copycat recipe or even a "tastes-like" recipe. I found comments on blogs and message boards that this recipe is not in any of the Disney Cookbooks or Brennan's cookbooks.
Watch the video linked above, and if you are of a mind to do so, try making the dish from the video. If it turns out to be close to Jazz Kitchen's dish, let me know and I will spread the word.
I will post this for reader input. Maybe one of my readers who has had the dish at Jazz Kitchen can provide a recipe that, from their experience of both recipes, they can recommend as being close to the actual dish.
